I don't think I got sick all of 2013. Then, right around the new year, bam! Sick as a dog! And now here I am, two months into 2014, and sick again! I hope this isn't a bad omen! I am not going to take it like that. I am going to look at is as an opportunity to get to my healthiest state. So, the juicer is back on the counter and soup season is upon us.
I have the easiest soup ever for you. It is bursting with flavor, vitamins, and cold fighting immune busters. Its also great reheated!
Its time to nourish your body and soul with a bowl of carrot ginger soup.
- 1 Tbsp coconut oil
- 1/2 white or yellow onion
- 2 cloves garlic
- 2 cups veggie broth
- 3 cups water
- 1 potato
- 4-8 carrots depending on size (4 cups grated)
- 1 1/2 inch piece of ginger
- 1/2 inch piece of turmeric
- 1 sprig rosemary
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- salt and pepper to taste
- fresh parsley and nutritional yeast to garnish (optional but highly recommended)
First things first, grate those carrots! Either in a food processor or with a hand grater. |
Chop or grate the ginger and turmeric. |
Chop the onion and garlic. Heat the oil in a soup pot. Add onion and garlic to the hot oil and cook about 5 minutes. Add broth, water, ginger, turmeric, and potato (peeled and cubed). Bring soup to a boil. Now add carrots (grated), rosemary, cumin, cayenne, and salt and pepper. Cook until potatoes are very tender. Remove rosemary sprig. Blend soup either in a blender or with a hand blender. At this point you are pretty much ready to eat! If your soup is too thin, bring it back to a boil and let it reduce, if it is too thick, just add a little more water. Make sure to taste test and add more salt if necessary. (I don't like to put measurements of salt because I tend to like foods less salty than others).
According to my big book, Prescription for Nutritional Healing, turmeric has many healing qualities. These include fighting free radicals, protecting the liver against toxins, aiding in circulation, and lowering cholesterol. Turmeric is known to have anticancer and anti-inflamitory properties. Ginger also fights inflammation and helps circulation. Ginger can ease stomach discomfort or indigestion. It is also rich in antioxidants like vitamin C. So eat up!!
Don't forget that cayenne is super good for you too! It's great for your metabolism and good for your liver and blood pressure!
